Better known for Sherry, this fractional blending system was first brought to Champagne by Anselme Selosse. Bernard Dumont began his solera in 1991. He uses one stainless steel tank and every year removes 1/3 for bottling and fills with the current vintage. The beauty is that the new wine seamlessly takes on the flavor, aromas & texture ((toasty brioche, Parmesan, custard) of the old wine while maintaining its freshness.
